About the recipe

Trouxas de ovos are delicate, glossy sweets made from sheets of yolk cooked in syrup.

The wrapped shape gives the sweet its name and calls for a steady hand so the sheets do not tear.

Ingredients

  • 14 sieved egg yolks
  • 400 g of sugar
  • 250 ml water
  • Egg yolk sweet for filling
  • Optional cinnamon

Method

  1. Prepare a light syrup and keep it warm.
  2. Pour small pools of yolk to form thin sheets.
  3. Lift each sheet carefully.
  4. Place a little egg yolk sweet in the centre.
  5. Fold into a small parcel.
  6. Serve with syrup and optional cinnamon.

  • Shape one parcel at a time.
  • Use wide utensils so the sheets do not break.
