Travesseiros de Sintra are puff-pastry sweets with a rich filling, linked to the town’s pastry shops.

The home editorial version uses almonds, egg yolks and sugar to recall the filling’s texture.

Ingredients

  • 500 g puff pastry
  • 180 g ground almonds
  • 180 g sugar
  • 80 ml water
  • 4 egg yolks
  • Subtle cinnamon
  • Confectioners’ sugar to finish

Method

  1. Make a syrup with sugar and water to a light stage.
  2. Stir in the almonds and cook briefly.
  3. Off the heat, incorporate the yolks gradually.
  4. Cook over low heat until thickened, then let cool.
  5. Cut the puff pastry into rectangles and fill them.
  6. Seal, bake until golden and dust with sugar.
