About the recipe

Jesuítas are classic Portuguese pastry sweets, recognised by their triangular shape and puff pastry.

The sweet topping and delicate filling make them ideal for afternoon tea or coffee.

Ingredients

  • 2 sheets of puff pastry
  • 150 g egg yolk sweet or almond cream
  • 1 egg white
  • 180 g icing sugar
  • Optional sliced almonds
  • Flour for dusting

Method

  1. Roll out the puff pastry and cut triangles.
  2. Fill with a thin layer of egg yolk sweet.
  3. Top with another triangle and seal gently.
  4. Mix the egg white and sugar for the topping.
  5. Spread over the top and scatter the almonds.
  6. Bake until puffed and golden.

Tips from Empório Portugal

  • Too much filling will leak during baking.
  • The pastry should be chilled before baking.
  • The topping must be spread thinly.

Possible substitutions in Brazil

  • Almond cream can replace the egg yolk sweet.
  • Ready-made puff pastry makes the recipe easier.

Pairing

Espresso or black tea. No alcoholic drink is required.
