About the recipe

Guardanapos are showcase Portuguese sweets, with soft sponge folded to resemble a napkin.

The egg yolk cream filling brings colour, sweetness and a classic patisserie character.

Ingredients

  • 5 eggs
  • 150 g sugar
  • 150 g of flour
  • 1 teaspoon baking powder
  • Lemon zest
  • 300 g egg yolk cream
  • Sugar for dusting

Method

  1. Beat the eggs with the sugar until light and voluminous.
  2. Fold in the flour, baking powder and zest.
  3. Spread the batter in a shallow baking tin.
  4. Bake until set but still moist.
  5. Cut into squares and fill with egg yolk cream.
  6. Fold into a napkin shape and dust with sugar.

  • A thinner sponge folds more neatly.
  • Do not overbake or the sponge may crack when folded.
  • The egg yolk cream must be cold before filling.

  • A thin sponge cake can be used as the base.
