- 5 eggs
- 150 g sugar
- 150 g of flour
- 1 teaspoon baking powder
- Lemon zest
- 300 g egg yolk cream
- Sugar for dusting
Method
- Beat the eggs with the sugar until light and voluminous.
- Fold in the flour, baking powder and zest.
- Spread the batter in a shallow baking tin.
- Bake until set but still moist.
- Cut into squares and fill with egg yolk cream.
- Fold into a napkin shape and dust with sugar.
