About the recipe

Bolo lêvedo is an Azorean specialty, especially associated with São Miguel.

It sits somewhere between bread and cake, with a soft texture and a lightly sweet flavour that pairs well with butter.

Ingredients

  • 500 g of flour
  • 10 g dried yeast
  • 200 ml warm milk
  • 80 g sugar
  • 2 eggs
  • 60 g butter
  • 1 pinch of salt
  • Flour for dusting

Method

  1. Mix the ingredients and knead until a soft dough forms.
  2. Leave to rise until doubled in size.
  3. Divide into thick discs.
  4. Let the discs rise again.
  5. Cook on a griddle or heavy frying pan over low heat, turning once.
  6. Serve warm with butter.
