About the recipe

Bolo de caco com manteiga de alho is one of the most beloved ways to serve Madeiran bread.

The soft dough, made with sweet potatoes in many versions, comes to life when it arrives hot at the table with aromatic butter.

Ingredients

  • 500 g flour
  • 200 g boiled and mashed sweet potato
  • 10 g dried yeast
  • 250 ml of warm water
  • 1 teaspoon of salt
  • 100 g butter
  • 3 cloves of garlic
  • Chopped parsley

Method

  1. Mix flour, sweet potato, yeast, water and salt.
  2. Knead until soft dough forms.
  3. Leave to rise until doubled in size.
  4. Shape into discs and cook on a hot griddle.
  5. Mix butter, garlic and parsley.
  6. Serve the breads hot with the butter.

Tips from Empório Portugal

  • A hot griddle gives the bread its characteristic marks and flavour.
  • Sweet potatoes make the dough soft.
  • Butter must be creamy to spread.

Possible substitutions in Brazil

  • A heavy frying pan can replace the traditional caco (stone griddle).
  • Regular potatoes can be used, but they change the flavour.
