About the recipe

Baba de camelo is a simple, sweet and very creamy Portuguese dessert.

The base combines caramelised condensed milk and eggs, making a caramel-flavoured mousse.

Ingredients

  • 1 tin of caramelised sweetened condensed milk or firm dulce de leche
  • 5 eggs, separated
  • 1 pinch of salt
  • Toasted almonds, optional

Method

  1. Separate the eggs.
  2. Mix the egg yolks with the caramelised condensed milk until smooth.
  3. Beat the egg whites to stiff peaks with a pinch of salt.
  4. Gently fold the beaten egg whites into the condensed-milk mixture.
  5. Divide among serving glasses or bowls.
  6. Chill until set.
