Tripas à moda do Porto is one of the city's most distinctive dishes, with an intense flavour and long preparation.
The recipe combines well-cleaned tripe, white beans, meat and sausages in a robust stew.
Ingredients
- 1 kg of cleaned and pre-cooked tripe
- 500 g of cooked white beans
- 300 g of beef
- 200 g of chicken or hen
- 150 g of chouriço
- 150 g ham or bacon
- 2 onions
- 4 cloves of garlic
- 2 carrots
- Bay leaves, olive oil, salt and pepper
Method
- Wash and cook the tripe until very tender.
- Cook the meats and cured sausages in an aromatic broth.
- Sauté onion, garlic, carrot and bay leaf.
- Add the sliced meats, tripe and white beans.
- Simmer slowly until the sauce is rich and thick.
- Adjust seasonings and serve with white rice.
