About the recipe

Tarte de grão shows how Portuguese cuisine transforms legumes into delicate sweets.

Chickpeas add texture to the filling, while lemon, sugar and eggs create a homemade confectionery flavour.

Ingredients

  • 1 puff or shortcrust pastry base
  • 300 g cooked chickpeas
  • 250 g of sugar
  • 4 egg yolks
  • 2 eggs
  • Lemon zest
  • 1 tablespoon of butter
  • Optional cinnamon

Method

  1. Blend the cooked chickpeas until smooth.
  2. Mix sugar, eggs, yolks, butter and lemon.
  3. Add the chickpea purée.
  4. Line the tart tin with the pastry.
  5. Add the filling and bake until golden.
  6. Serve cold.

Tips from Empório Portugal

  • Removing the chickpea skins makes the texture finer.
  • Puff pastry creates crunchy contrast.
  • The filling should be moist.

Possible substitutions in Brazil

  • Canned chickpeas can be used if well drained.
  • Cinnamon can be added in small quantities.
