About the recipe

The Algarve almond tart highlights one of the most common ingredients in southern Portuguese sweets.

The soft base is covered with caramelised almonds, creating a contrast between the tender base and the crisp topping.

Ingredients

  • 200 g flour
  • 150 g sugar
  • 100 g butter
  • 3 eggs
  • 1 teaspoon baking powder
  • 150 g flaked almonds
  • 100 g sugar for topping
  • 80 ml milk

Method

  1. Prepare a dough with flour, sugar, butter, eggs and baking powder.
  2. Bake the base until it starts to set.
  3. Bring almonds, sugar, milk and butter to a boil.
  4. Spread the topping over the base.
  5. Return to the oven until caramelised.
  6. Let cool before cutting.

  • Sliced almonds give better texture.
  • Slice only when completely cool.
