About the recipe

Sonhos de abóbora are Christmas pumpkin fritters, soft on the inside and golden on the outside.

Pumpkin adds colour, moisture and a mild flavour, creating light, festive fritters.

Ingredients

  • 500 g cooked and well-drained pumpkin
  • 250 g flour
  • 3 eggs
  • 80 g sugar
  • Orange zest
  • 1 teaspoon baking powder
  • Oil for frying
  • Sugar and cinnamon

Method

  1. Cook and squeeze the pumpkin well.
  2. Mix the pumpkin, eggs, sugar and zest.
  3. Add the flour and baking powder.
  4. Heat oil in a deep pan.
  5. Fry spoonfuls until golden.
  6. Roll in sugar with cinnamon.

  • Pumpkin needs to be very dry.
  • Dough that is too soft absorbs more oil.
  • Fry a few at a time.

  • Cabotiá pumpkin works very well.
  • Lemon zest can replace orange zest.
