Ingredients
- 6 boiled eggs
- Plenty of chopped parsley
- 1 tablespoon of olive oil

Method
- Cut boiled eggs in half and remove the yolks.
- Mash the yolks with parsley, olive oil, salt and pepper.
- Refill the egg-white halves with the yolk mixture.
- Coat in flour, beaten egg and breadcrumbs.
- Fry until golden.
- Drain and serve warm or cold.
