About the recipe
Ervilhas com ovos escalfados is a simple, comforting one-pot dish.
The sauce contains tomato, onion and, in many versions, a little chouriço to add depth.
Ingredients
- 600 g fresh or frozen peas
- 4 eggs
- 1 chopped onion
- 2 garlic cloves
- 1–2 grated tomatoes
- 100 g of chouriço in slices
- 60 ml olive oil
- 1 bay leaf
- Salt and pepper
Method
- Sauté the onion, garlic, bay leaf and chouriço in olive oil.
- Add the tomatoes and cook until a sauce forms.
- Add the peas and a little water.
- Cook until the peas are tender.
- Make four wells in the sauce and crack an egg into each one.
- Cover the pan until the whites set and the yolks are creamy.

- Do not overcook the eggs.
- Frozen peas go straight into the pan.
- Keep enough sauce for mopping up with bread.
Possible substitutions in Brazil
- A mild smoked sausage can substitute for chouriço.
- For a version without sausage, add garlic, bay leaves and olive oil.
