About the recipe

Entrecosto no forno is a slow-roasted dish with intense flavour and an unhurried preparation.

The wine, garlic and paprika marinade seasons the meat deeply and flavours the potatoes.

Ingredients

  • 1.2 kg pork ribs (entrecosto)
  • 800 g of potatoes
  • 5 cloves of garlic
  • 1 tablespoon paprika
  • 150 ml white wine
  • 80 ml olive oil
  • 1 bay leaf
  • Salt and pepper, plus rosemary (optional)

Method

  1. Season the pork ribs with garlic, paprika, wine, the bay leaf, salt and pepper.
  2. Marinate if time allows.
  3. Place in a roasting dish with the potatoes.
  4. Drizzle with olive oil and part of the marinade.
  5. Roast until the meat is tender and golden.
  6. Serve with the pan sauce.
