Entrecosto no forno is a slow-roasted dish with intense flavour and an unhurried preparation.
The wine, garlic and paprika marinade seasons the meat deeply and flavours the potatoes.
Ingredients
- 1.2 kg pork ribs (entrecosto)
- 800 g of potatoes
- 5 cloves of garlic
- 1 tablespoon paprika
- 150 ml white wine
- 80 ml olive oil
- 1 bay leaf
- Salt and pepper, plus rosemary (optional)
Method
- Season the pork ribs with garlic, paprika, wine, the bay leaf, salt and pepper.
- Marinate if time allows.
- Place in a roasting dish with the potatoes.
- Drizzle with olive oil and part of the marinade.
- Roast until the meat is tender and golden.
- Serve with the pan sauce.
