About the recipe

Boleima alentejana is a simple, rustic home-style baked sweet.

The dough is layered with apple, sugar and cinnamon, forming a flat, fragrant cake.

Ingredients

  • 500 g flour
  • 150 ml of mild olive oil
  • 180 ml water
  • 4 sliced apples
  • Sugar and cinnamon
  • Lemon zest
  • 1 pinch of salt

Method

  1. Mix flour, olive oil, water and salt until dough forms.
  2. Divide into two parts.
  3. Spread one layer on a baking sheet.
  4. Top with the apples, sugar, cinnamon and lemon zest.
  5. Cover with the second layer of dough.
  6. Bake until golden.

Tips from Empório Portugal

  • The dough should remain rustic; do not overwork it.
  • Firm apples maintain texture.
  • Cinnamon is an essential part of the flavour.

Possible substitutions in Brazil

  • Fuji or Gala apples work well.
  • Mild olive oil avoids overly intense flavour.

Pairing

Black tea or coffee. No mandatory alcoholic beverage.
