About the recipe

Bacalhau gratinado is a practical, creamy oven-baked dish that works well for entertaining.

Unlike more traditional preparations, it accepts vegetables and a crunchy coating without overshadowing the cod.

Ingredients

  • 600 g desalted and shredded cod
  • 2 cooked diced potatoes
  • 1 grated carrot
  • 1 chopped onion
  • 2 garlic cloves
  • 400 ml white sauce
  • 80 ml olive oil
  • Breadcrumbs or mild cheese
  • Nutmeg and pepper

Method

  1. Sauté onion, garlic and carrot in olive oil.
  2. Add the cod and cook for a few minutes.
  3. Mix potatoes and white sauce.
  4. Season with pepper and nutmeg.
  5. Transfer to a serving dish and cover with breadcrumbs or cheese.
  6. Bake until golden and bubbling.
